New Orleans Style Pecan Bread Pudding
 8 cups cubed / torn dried or stale bread                              1 cup whole milk
 2 cups sugar                                                                               1 1/2 cups pecans, chopped and toasted
 8 egg yolks from large eggs                                                     1 tbsp. vanilla
 2 cups heavy cream                                                                  1 tsp. salt 
 9" x 11" buttered (or non stick sprayed) baking dish
 preheated 350 degree oven

 1. whisk egg yolks, sugar, vanilla, and salt together until fully combined
 2. while still whisking, slowly pour in milk and cream, continuing to whisk until fully combined
 3. place bread and pecans in a large mixing bowl and pour cream mixture over the top, gently folding from the bottom up (try not to break up the bread too much) until all of the bread is fully coated
 4. allow to rest for 10 - 15 minutes until the liquid is fully absorbed by the dried bread
 5. spoon into baking dish and level out, but do not compress
 6. bake in preheated oven for 50 - 60 minutes, or until set - if pudding begins to overbrown before fully set, tent with aluminum foil for remainder of baking time
 7. let rest for 15 - 20 minutes before serving
